Land Inzicht x Anna Haen
For this project, I co-created a seasonal ice cream concept together with chef Paul Jonker with Land Inzicht for Anna Haen, a former dairy farm and food venue near Abcoude. The concept, Die is van de Melkboer (“This one’s from the milkman”), translates local heritage, ecology and taste into a playful, sensory icecream experience.
As designer, I developed the overarching concept, visual language, and narrative framework drawing from the farm’s dairy past, the surrounding agricultural landscape, and the natural cycles of the season. We designed and built the ice cart from scratch, turning it into both a functional object and a interactive installation for storytelling.
Two ice cream varieties formed the heart of the project: a creamy dairy-based flavor from the milkman and a plant-based sorbet not from the milkman. Each was composed of ingredients sourced from the immediate environment (from local entrepreneurs or resources) Like : the milk, hay, wild field herbs, apples, pears, rosehip paired with toppings like wild carrot & fennel caramel, flower pollen crumble, and elderflower marshmallow.
The project launched as a pilot pop-up at Anna Haen and has since been continued by the location’s team. Each new season brings another set of local flavors (which we will be providing) , allowing visitors to quite literally taste the landscape.
