Brandt – A Winter Gathering at Strandlab


As part of my residency at Strandlab, I co-created Brandt with chef Paul Jonker: a warm, winter-focused evening shaped by local contributions and sensory storytelling. We invited neighbours and partners to share something they could "miss" — from forgotten vegetables to personal stories — which we then translated into five dishes built around avens, pumpkin, cabbage, onion, and carrot.

I designed the spatial setting, created custom non-food elements, and developed a narrative structure that wove together taste, memory, and seasonality. Each dish was linked to a local voice or material partner, with guests guided through the evening by stories of warmth, loss, and winter transformation.

@036natuurlijk , @wdwrdz , @onzevolkstuinen.almere , @almeersewolunie and @wildekeuze were all connected to small dishes.
