Frisse Neus x Buitenplaats Elswout

For this project, I co-created a narrative walking experience on the historic Elswout estate together with chef Paul Jonker. The walk followed the rhythm of growth from seed to fruit with site-specific dishes, non-food designs, and stories responding to the estate’s diverse ecology.
​
As designer, I developed the overall concept and storytelling structure, mapped out the route experience, and translated ecological and historical research into a sensory scenography. Each stop along the route reflected a distinct stage of growth (germination, youth, maturity, fruition), brought to life through plants, animals, fungi, and insects.
​
I conducted research into local myths, edible species, symbolic traditions, and historical land use transforming these into tactile and visual interventions that layered narrative, taste, and time. The experience connected food and form to place, in close collaboration with forest rangers, makers, and local producers.
