VOOR DAG EN DAUW x Elswout

In collaboration with Staatsbosbeheer, I co-created an intimate dining experience at Buitenplaats Elswout together with chef Paul Jonker. Set within the rarely accessible Model Farm, the project invited small groups over three weekends to rediscover this historical estate through a sensory and narrative lens.

​

Each course responded to a specific layer of Elswout’s landscape history. From the sand-shifting that shaped its terrain, to the pheasantry, the forest hermitage, and ornamental teahouses. I developed the visual storytelling and spatial experience, working closely with the site and season to reflect both cultural memory and ecological presence.

Local and foraged ingredients: elderflower, smoked hay, mushrooms, tree bark, a variety of nuts, and preserved cherries were transformed into dishes that mirrored the atmosphere of the estate. Alongside the food, sommelier Annabelle Koeleman paired Dutch wines that deepened the culinary narrative and highlighted the richness of local terroir.

This project offered guests a rare glimpse into Elswout. Not just through taste, but through design, history, and landscape. A quiet celebration of place, told through craft and collaboration.
